AVOCADO TOAST WITH ASPARAGUS AND TOMATOES

It’s a beautiful weekend in the Netherlands, it feels like summer has already started, so it’s time to get outside and enjoy the sun and 30 degrees while it lasts. Before I head out to enjoy the day, I share a quick, simple, and easy (those are my favorite) recipe for this delicious avocado toast. Enjoy!

INGREDIENTS (for 2):

  • 4 big bread slices (toasted)
  • 1 avocado
  • 8-12 mini or 1-2 standard tomatoes (sliced)
  • 16 asparagus
  • Handful of sprouts
  • Olive oil
  • Lemon juice
  • Salt & pepper

INSTRUCTIONS:

  1. Toast the bread and prepare the asparagus – you can either steam them for 1-2 minutes or put them in a heated pan together with a teaspoon of olive oil, and cook for 1-2 minutes until softened.
  2. On each toast put a few drops of olive oil, add ¼ of avocado (mash it with the fork), sliced tomatoes, four asparagus, and some sprouts. Sprinkle with salt and pepper and drizzle with lemon juice and olive oil. Enjoy!

Ovaj vikend nam je lijepo vrijeme u Nizozemskoj, kao da je ljeto već počelo tako da je danas dan za uživanje na suncu i 30 u zraku. No prije nego izađem, dijelim jedan brz, jednostavan i lagan (takvi su mi omiljeni) recept za ovaj ukusan tost. Uživajte!

SASTOJCI (za 2 osobe):

  • 4 velike kriške kruha (tostirati)
  • 1 avokado
  • 8-12 mini ili 1-2 standardne rajčice (narezati na ploške)
  • 16 šparoga
  • Šaka klica
  • Maslinovo ulje
  • Sok od limuna
  • Sol i papar

UPUTE:

  1. Tostirajte kruh i pripremite šparoge – možete ih kuhati na pari 1-2 minute ili peći u zagrijanoj tavi s jednom čajnom žličicom maslinovog ulja, 1-2 minute dok ne omekšaju.
  2. Na svaki tostirani komad kruha stavite nekoliko kapi maslinovog ulja, dodajte četvrtinu avokada (zgnječite ga vilicom), narezane rajčice, šparoge i malo klica. Posolite i popaprite, te pošpricajte s nekoliko kapi limunovog soka i maslinovog ulja. Dobar tek!
