Last Saturday I was at Vegan Food Festival in Amsterdam where I tried many new foods. The festival had numerous foods stands which offered different vegan things to taste and buy, live music to listen to, and various speakers giving presentations on vegan topics.

It was very nice to be there, to see all the people interested in vegan food, and just be a part of the positive vibe and mindful lifestyle movement.

I also attended the presentation called “Creating a Vegan World” which provided an interesting perspective on the vegan community (a similar one you can watch here).

While strolling in between various food stands, I noticed somebody eating a stuffed avocado and that caught my attention. In the end, we ate so many other things, so I forgot about the avocado.

A few days later when I saw an avocado laying in the fruit basket on the kitchen table, I immediately knew what I will use it for. So I stuffed avocado with some goodies and was delighted with the result. It is filling, but light, and that is my favorite type of food. It is also a good source of proteins (nutritional yeast flakes and hummus) and healthy fats (avocado and pesto). I think this is also a nice meal to serve as a starter if you have guests; you will definitely surprise them. It is something new and unusual; I always like to try such food.

I didn’t put any measures in the recipe, please feel free to adjust everything according to your preferences. If you love hummus, add more. If you don’t have pesto, skip it. Do the same with all ingredients, this is just an inspiration, so hopefully, you will feel inspired. Enjoy!

INGREDIENTS:

  • Avocado
  • Humus
  • Pesto (LINK)
  • Fresh cucumber (cleaned and diced)
  • Dry fried onions
  • White sauce (mix of vegan mayo and soy yogurt 1:4, and ½ teaspoon of apple vinegar)
  • Lemon juice
  • Nutritional yeast flakes
  • Salt & pepper

INSTRUCTIONS:

  1. Cut avocado in half, remove the pit and with a non-sharp side of the knife cut the avocado in cubes, keeping it in the skin (see the photo above).
  2. Stuff the avocado with hummus and pesto and top with diced cucumber and dry fried onions. Drizzle with white sauce, lemon juice and sprinkle with nutritional yeast flakes, salt, and pepper. Add an additional sprinkle of dry fried onions on the top of everything. Enjoy!

Punjeni avokado – brz i lagan veganski ručak
Prošle subote bila sam na Vegan Food Festivalu u Amsterdamu, i probala sam puno novih veganskih jela. Festival je ponudio brojne štandove hrane na kojima se hrana mogla degustirati i kupiti, glazbu uživo, te razne prezentacije na temu veganstva.

Bilo je vrlo ugodno biti dio tog pozitivnog okruženja i pokreta prema svjesnijem načinu življenja, te vidjeti sve te ljude zainteresirane za vegansku hranu.

Također sam prisustvovala prezentaciji pod nazivom “Creating a Vegan World” koja je ponudila zanimljivu perspektivu na veganski pokret.

I tako dok smo šetali od štanda do štanda, primijetila sam jedno jako zanimljivo jelo u ruci osobe u prolazu – punjeni avokado. Na kraju sam skroz zaboravila na avokado i opet sam ga se sjetila nekoliko dana kasnije kad sam ga ugledala u košari za voće. Odmah sam znala što slijedi. Napunila sam avokado onim što sam imala doma i oduševila se rezultatom. Jelo je zasitno, ali lagano, a takva su mi najdraža. Također je dobar izvor proteina (prehrambeni kvasac, humus) i zdravih masnoća (avokado, pesto). Mislim da je također super kao predjelo kad imate goste; sigurno ćete ih iznenaditi. Nešto novo i neobično; ja uvijek volim takva iznenađenja.

U recept nisam stavljala mjere, slobodno prilagodite sve prema vlastitim željama. Ako volite humus, dodajte ga više. Ako nemate pesto, preskočite ga. I tako sa svim sastojcima. Ovo je recept za inspiraciju, nadam se da će vas inspirirati i motivirati da probate nešto novo. Uživajte!

SASTOJCI:

  • Avokado
  • Humus
  • Pesto (LINK)
  • Svježi krastavac (očistiti i narezati na kockice)
  • Suhi prženi luk
  • Bijeli umak (mješavina veganske majoneze i soja jogurta 1: 4, te ½ čajne žličice jabučnog octa)
  • Sok od limuna
  • Ljuske prehrambenog kvasca
  • Sol & papar

UPUTE:

  1. Prepolovite avokado, izvadite špicu i tupom stranom noža izrežite avokado na kockice, zadržavajući ih unutar kore (vidi sliku iznad).
  2. Napunite avokado humusom i pestom, te na vrh stavite kockice krastavca i suhi prženi luk. Prelijte bijelim umakom i sokom od limuna, pospite s ljuskama prehrambenog kvasca, te posolite i po paprite. Vrh dodatno pospite suhim prženim lukom.
